「十二六」は昔からあるどぶろくを現在の味覚に合わせた全く新しい酒。よくすりつぶした米こうじ、これと水だけでどぶろくはできあがる。こうじの力で米から十分な甘みがでる。それを酵母がアルコールと炭酸ガスに変える。 米の甘味十分に、キリリとした酸味、程よい刺激の炭酸の泡。この酒ほど口の中が楽しくなる酒も珍しい。
